General Tso's Chicken


12 oz chicken meat
1 egg
5 red hot chillie pepper
1/2 tbsp minced garlic
1/2 tbsp minced ginger
1/2 tbsp dark soy sauce
1/2 tbsp wine
1/2 tbsp corn starch
1 tsp vinegar
1 tsp salt
1 tsp seseme oil
3 cups vegetable oil for deep frying

clean chicken meat and cut into 1-1/2 inch cubes
beat egg and mix with chicken meat
add dark soy sauce and corn starch
mix well
wash and clean red hot chillie pepper, removing seed and stem cut into quarters

heat oil in wok till hot and pre fry the chicken pieces till almost cooked
pour off the oil leaving 2 tbsp
fril the red hot chillie pepper to spice up the oil
add minced garlic, mince ginger, dark soy sauce, vinegar and water mixed with starch for glazing
add seseme oil and the pre fried chicken pieces, turn to high heat and toss all ingredients till well blended and turns a nice spicy brown color
sizzle with the rice wine
