Russian Eggs - Yaitsa po-russki

10 hard boil eggs
3 Tbs mayonnaise
2 Tbs Dijon mustard
5 pickled gherkins, diced
2 Tbs finely chopped scallions
Salt, black pepper
1 red pepper

Cut the eggs in half and remove the yolks
Mash the yolks and mix with the other ingredients, then return to the empty egg whites
Decorate with star shaped slices of peppers and capers
