Steamed Mud Carp

Mud Carp is a Guangdong specialty. Mud carps from ShunDe District are plentyful but do not taste good because they feed on silkworm droppings. Those from PanYu are much better quality. Mud carps are among the tastier of freshwater fishes. They are available all year round, but the best season is between November and January. Summer mud carps are thin. Since mud carps are avaliable all year round and plentiful it is inexpensive. There are many small bones. You have to be careful when eating. However, the fresh taste of mud carp more than compensate for this. Since the mud carp is a cheap fish, it is rarely available in restaurant
